Smoked Ham

Judged best in state at the California Association of Meat Processors convention. Our boneless hams are cane and maple sugar cured, then smoked using natural Hickory wood.

 

Cooking Directions:

Place ham in pan with at least 1 inch tall sides. Cover with foil. Bake in a 325 degree oven for approximately 1 1/2 - 2 1/2 hours. 

 

Place roast thermometer in the middle of the ham. Pull at 130 degrees internal temperature. Let stand 10 minutes. Slice and enjoy.

**Hams are pre-cooked in our smokehouse, so be careful not to overcook!

 

 

 

Smoked Turkey - whole

Judged best in state at the California Association of Meat Processors convention. Our smoked turkeys are cane and maple sugar cured, then smoked using natural Hickory wood.

 

Cooking Directions:

Place whole smoked turkey in pan with at least 1 inch tall sides. 

 

Bake in a 325 degree oven for approximately 2 1/2 - 3 hours. Place thermometer in middle of turkey breast. Pull out at 140 degree internal temperature. 

**Smoked turkeys are pre-cooked in our smokehouse, so be careful not to overcook!

 

 

 

Smoked Turkey - sliced

Cooking Directions:

For pre-sliced turkey only - Cover sliced smoked turkey with foil. Bake in a 325 degree oven for approximately 1 hour.

Prime Rib

USDA choice certified premium

 

Cooking Directions:

Cook in a 325 degree oven. Place roast in shallow pan bone side down. Place thermometer so last 1" of probe is in the middle of the roast.

 

Pull roast at 130 degree internal temperature for medium rare. Let stand approximately 10 minutes. Slice

 

Approximate cooking time 2 1/2 to 3 hours.

 

 

 

Maine Lobster Tails

Maine Lobster Tails are a cold water tail, making them consistently one of the highest quality lobster tails available. 

 

Cooking Directions:

To steam - Split tail and steam for approximately 6-10 minutes depending on steamer capacity. 

To BBQ - Stand shell in grill. Grill for approximately 10 minutes over coals, or 12 minutes over medium heat gas. Turn tail meat side down for last 2 minutes of cooking time.

 

When done, meat will turn white and shell will be red.

**Be cautious not to overcook**

 

 

 

Mexican Style Chicken Breasts

Our Mexican Style Chicken Breasts are a 1/2 chicken breast stuffed with a mild green chili and Monterey Jack cheese, dipped in butter, then rolled in breadcrumbs, special seasonings and parmesan cheese. They are a delicious and easy to prepare meal. 

 

We recommend serving with Spanish rice and beans. For an extra burst of flavor, top with fresh salsa.

 

Cooking Directions:

Bake at 400 for approximately 25-35 minutes, depending on the size.

 

 

 

 

Alaskan King Crab Legs

We feature only jumbo, wild caught Alaskan King Crab Legs.

 

Cooking Directions:

You can BBQ, bake, broil, steam, or boil crab legs. We recommend steaming as it mellows the oceans salts and enhances the sweet buttery flavor of the gourmet treat.

 

 

 

Custom Cured Corned Beef Round

We feature only USDA Choice Certified Premium corned beef round; the round is leaner with virtually no waste while still delivering excellent flavor. 

 

Cooking Directions (stove top):

Place corned beef in pan with 2-3 inches of water, cover and simmer over low heat for 1 1/2 - 3 1/2 hours (cooking times vary based on size).  Bring to at least 140 degrees internal temperature or cook until fork tender. 

 

Add carrots and potatoes during the last hour. Add cabbage during the last 30 minutes. 

 

Cooking Directions (Oven):

Place corned beef in pan with approximately 1 inch of water; cover with lid and bake in a 325 degree oven for 1 hour. Add carrots and potatoes - bake for an additional 2 -3 hours (cooking times vary based on size). Add cabbage for the last hour. Bring to at least 140 degrees internal temperature or cook until fork tender.
